Regarding Maris's Mutism

Maris mostly pantomimes in order to "talk". She uses gestures, movements and facial expressions -- so she's very expressive by default. Regarding the question of whether Maris cannot just use writing to communicate with people: Maris comes from the 1600s and has had no cause to read and write until the Duke's son insists that Maris learn. As Maris is only beginning to learn, she is not the best speller, and she frequently misspells words, such as "all right" as "alrite" and "don't" as "donte".
The Duke's son has given Maris a wax tablet so that she can communicate better, but Maris only really uses the tablet when she's trying to say something too complicated for her to pantomime. This is mostly because the weight of the wax tablet impedes on Maris's dancing, as she's prone to start dancing anywhere on the manor's grounds, and extra weight throws her off balance. She usually leaves aside her tablet in this case, despite how it may clear up complicated conversations.
So in games, she'll mostly be pantomiming in person with other characters, but on devices like communicators, where it's harder to pantomime, she'll use her broken English.
